The salt produced today contains some form of iodine (potassium iodide or sodium iodide), which has been added to help reduce the iodine deficiency in humans. Prior to this time, many Americans had goiters, a result of a lack of iodine in the body. Two main sources of salt are rock salt and sea salt. In Israel, the Dead Sea area has a huge content of salt. In the southern part of the sea there are large piles of salt crystals, sitting silently along the shore like crystal monuments. On the western bank of the southern shore of the Dead Sea are several large mountains that, upon closer investigation, are seen to be mountains of salt. Several small mining companies remove the salt from these salt mountains and use it for table salt. The strong salt from the Dead Sea is collected and packaged and used in bathwater for therapeutic purposes. One Web site for Dead Sea salt products states that Josephus wrote: “The Dead Sea cannot be praised too highly . . . travelers take as much of this salt as they are able to take home with them because it heals the human body and is therefore used in many medicines.” Dead Sea salt contains a high concentration of minerals, including magnesium, potassium, bromine, and calcium, and too many chemicals for table salt. Normal sea salt has 90 percent sodium, while the Dead Sea salt has only 10 percent sodium. However, through a modern filtering process, sea salt can be separated from normal seawater and used to season foods. Sea salt contains various trace minerals that the body needs, and is the healthiest form of salt available.
