The Olive and the Olive Oil In the time of Moses there were 8,580 Levites, age thirty and upward, ministering at the tabernacle (Num. 4:47–48). By the time Solomon built the temple, their population increased to 38,000 (1 Chron. 23:3). The Levites lived near the tabernacle and the temple, serving in full-time ministry. One purpose of the numerous sacrifices and offerings offered at the tabernacle and temple was to provide food for the priests and their families. When preparing a burnt offering, God instructed Moses to prepare the meat with fine flour mixed with a quarter hin (one and one-third gallons) of olive oil. Olive oil is recognized as one of God’s greatest natural gifts to mankind. It is the center of the Mediterranean diet. First, olive oil contains monounsaturated fatty acids high in antioxidants. Two spoonfuls of pure olive oil each morning can reduce bad (LDL) cholesterol and raise good (HDL) cholesterol. Extra-virgin olive oil produced by the first pressing of the olives contains vitamin E, DHA, and omega-3 and omega-9 oils, which aid in overall good health.
